Marinated Crockpot Chicken

I’ve been reading through “In the Kitchen” by Modern Alternative Mama and enjoying it. Not a super-innovative set of recipes, but some great options for people new to the idea of cooking with “real food.” I was looking for a book that I could recommend to people wanting a basic “help me find healthy-but-familiar recipes” cookbook, and she delivers. She has a great basic chicken marinade in the book, and I tweaked it and invented my own version and opted for a crockpot option. The crockpot is *always* a good option :-).

Crockpot Marinated Chicken 

(enough for approximately 4 lbs. of meat – I did 9 chicken legs)

Ingredients:

4 tablespoons extra virgin olive oil
4 tablespoons apple cider vinegar (or juice of 1-2 lemons)
2-4 cups of water (start with 2 cups)
½ medium onion, chopped
2 cloves garlic, minced
½ teaspoon black pepper
dash of cayenne pepper (or ½ teaspoon red pepper flakes)
1 teaspoon sea salt
1 teaspoon thyme
½ teaspoon basil
½ teaspoon sage

Mix all ingredients in a large container (I used a 9×13 glass pyrex dish with a lid); then add chicken pieces (marinates 3-4 lbs of chicken, or about 9 legs). Add additional water if needed, to cover meat. Cover and marinate for several hours or overnight.

The next day transfer the meat to the crockpot with ½-1 cup of the marinating liquid, and cook on low for 8 hours or high for 4 hours.

    Is this what you made when we were there?
    Ah, crockpots are wonderful. 🙂

    Incidentally, do you know what the difference between a crockpot and a slow cooker is? I do! (now 😉 )

    There’s a difference? Because I know they’re often used interchangably. . . but is there a true difference, like with yams and sweet potatoes :-).

    Think difference as in “chapstick and lipbalm” or “kleenex and tissues”.
