Grain-free Sandwiches

Going grain-free means giving up a lot of familiar foods, but it doesn’t mean you can’t have sandwiches :-). Okay, so they’re a bit different, but still fun and tasty :-).

A few days ago I had a few old bananas hanging around, so I whipped up some banana pancakes from Against the Grain and made Hans peanut butter sandwiches with them. He loved them! Totally a kid hit, but also tasty for adults :-).

    Yeah, well the sandwiches I really miss are the ones loaded with tomato, lettuce, mustard, avocado, etc. Hm. Not really sure how those flavors would pair with the pancakes, and I can’t really see it holding together my “Dagwood sandwiches” very well. šŸ™‚

    But, hey, for pb sandwiches, that sure works well!
